Mom's Strawberry Pie

There is nothing like a cool strawberry pie in the heat of summer. My children absolutely love this recipe and it never lasts a whole day in my house. Apply cool whipped topping at your own risk! This will always be my favorite strawberry pie recipe. 

Ingredients:

  • ​6 cups fresh cut strawberries (set 1 cup aside)
  • 3/4 cup of water
  • 3 Tbsp of Cornstarch
  • 1 cup of sugar

You can buy pre-made pie crust if you would like or you can make your own. I will include the one I use. I changed it up a bit and really like the new one. 

I use a Masher when making the pie filling and it works like a charm.

Instructions:

Once you have your strawberries cut and washed you can sit them aside. Take the cup you reserved and chop it into smaller pieces. Heat the water, sugar, cornstarch and the 1 cup of chopped strawberries in a pot over medium high heat or until boiling for about 3 minutes while mashing. Once all mixed together let cool for 10 minutes or longer. I let mine sit at room temperature for a little longer. 

Once the mixture is cool, mix with the remaining chopped strawberries and pour into pie crust of choice and chill. It is a good idea to make the crust ahead of time so it is cool and ready for strawberry mixture. 

Here are a few pictures of how the pie filling should look. It also makes a nice ice cream topping or jam on some toast if you do not want to just make a pie. It is so delicious.

In a recipe I saw you could use red food coloring but I prefer mine without color added. I think the natural strawberries are beautiful on their own. 



Here is the crust I make. I have been cutting down on flour these days so I make a mixture. You can use your own pie crust recipe or buy one already made. 

Pie Crust:

  • 1 cup all purpose flour
  • 3/4 super fine almond flour
  • 1/4 cup coconut flour
  • 2 tsps sea salt
  • 1 stick of unsalted butter
  • 3 to 4 Tbsp of cold water

I use my food processor and add the flour mixture and butter and then add cold water as needed. I pulse until it forms a ball. This pie dough does not roll well so I take it straight from the processor and form it into my pie dish with my fingers. Once I am happy with shape and thickness I bake it in the oven at 375° for 15 minutes. Let cool before adding strawberry mixture. 


That's it. The sad part is that it takes longer to make than it does to devour it just like the good ole days. But it is worth every minute of your time.
